I have actually survived 11 days without sugar, flour, and wheat! As promised, I would like to share a couple of recipes with you. If you are new here, please check out 31 Days to Food Addiction Recovery to learn more about my journey.
Each Friday for the remainder of the series, I plan to share recipes to help others take this path to freedom. Hopefully, I will be able to put together some tasty freezer meals for next week. Today’s menu includes Green Smoothies and Heart-Healthy Oat Pancakes…
Green smoothies are fantastic for so many reasons. They are easy to make, oddly delicious, packed with nutrition, and help with intense sugar cravings.
I was introduced to these by a wonderful nutritionist I have worked with. This is her recipe, which she has generously allowed me to share. Ingredients
- Large handfuls of spinach and kale
- 1 cucumber
- 1/2 lemon, peeled
- 1 apple, cored
- 1 inch fresh ginger root {more or less depending on your preference}
- 10 oz. water
- OPTIONAL: frozen berries, ice, or a frozen banana, if you need it sweeter or colder {I omitted these}
Steps
- Add water to blender. Fill to top with spinach and kale. Blend.
- Chop remaining ingredients and blend with the greens.
- Pour into individual portions and freeze what you are not using that day.
The picture on the right above shows how much 1 batch makes. I would recommend making several batches to have on hand. Take a serving out of the freezer each evening to be ready for the morning.
Note: Paula advises using coconut water. I used plain, purified water to avoid any additional sugar. Thank you Paula!

This is a delicious, quick, and easy breakfast. Three things I hope for in my meals…
Ingredients
- 1/2 cup rolled oats
- 2 eggs
- 1/2 cup reduced-fat cottage cheese {I have found Daisy brand to be the cleanest}
- 6 oz. frozen berries
Steps
- Combine first 3 ingredients. Stir for several minutes, mashing the cottage cheese with the fork as you stir.
- Pour half of the batter into a preheated nonstick skillet. Cook until both sides are slightly browned, about 3-4 minutes per side.
- While the pancakes are cooking, heat the berries in the microwave for 1 minute. Mash with a fork. Repeat until the berries are the temperature and consistency you prefer.
- Top pancakes with the warm berries.
Yield: 2 pancakes

Love the pancake recipe and the fact that it is perfect for one persopn. So many of my clients are single, or are trying to change the way they eat while the rest of the family continues on the same old path, so this is very helpful. And I’ll be making them this week end myself!

Thank you for the recipes. I have heard so much about the green smoothies but nobody I know actually regularly drinks them or makes them at home. Our idea of smoothie has been jamba juice sugar laden “smoothies.” I can’t wait to try yours!

Remember to use the berries if you think you will need it sweeter. It is not like those sugar packed smoothies. I feel so much better when I am drinking them daily! Get creative with the fruits you add to find the recipe that works best for you. I have used pears before too. I hope you enjoy them Judith!

My family likes that pancake recipe too, though I have to make twice that much! And I agree, Daisy brand is great for dairy products.

I haven’t tried any other Daisy brand products. I’ll have to check some of their other stuff out. I usually just make these pancakes for myself. I need to try them on my son too. Thanks for the inspiration, Abi :).
