Thanks to my food addiction issues I’m always looking for something sweet that won’t set me up for an all out binge. These black bean brownies completely fit the bill! I can actually eat one of them without finishing off the whole pan.
It’s not because they aren’t delicious. None of the ingredients are triggers for me. I hope they serve you well too.
Ingredients:
1 15 oz can black beans, drained and rinsed
2 large eggs
1/4 cup cocoa powder
2/3 cup honey
1/3 cup coconut oil
1/2 teaspoon baking powder
Pinch of salt
4 drops Peppermint essential oil
3/4 cup chocolate chips, divided
I’m learning dairy is a trigger for me, so I chose mini chocolate chips from Enjoy Life that are dairy free. They were delicious and great for those of us who can be extra sensitive to certain ingredients.
Preheat your oven to 350 degrees.
Blend all ingredients, except the chocolate chips, in a blender or food processor until smooth. (I absolutely love my Blendtec blender if you’re in the market for one.)
Stir in 1/2 cup chocolate chips and pour into a greased 8X8 pan. Top with the remaining 1/4 cup chocolate chips.
Bake 30-35 minutes, until a toothpick inserted in the center comes out clean.

The funny thing is I absolutely hate black beans, Linda. Luckily you can’t even tell they are in there. You still get the nutritional value and fiber from them though which is quite nice :).

These look so good and I have never thought about using beans before. I am a huge sucker for brownies and haven’t had any in a couple of years now because I know I can’t stop. My next cooking change is use more almond flour. Have you made anything with it?

I’m usually the same way with brownies, Tammy. These are the first that I can actually stop at one. It’s pretty amazing. I really want to start using almond flour more. I bought a cookbook last year with tons of recipes in it using almond flour but haven’t tried any of them out yet :).
